Gate Gourmet

Nutrition and food allergies are hot strategic topics for all airlines and for the specialised catering companies that supply their food. Bringing both my business and nutrition skills into play, this project helped the UK’s best-known airline caterer to market the nutritional quality of their menus and recipes, to give accurate allergen declarations and to offer tempting options for those on special diets. All part of the new Food Information Regulation (EU) 1169/2011.

Living Gluten-Free for Dummies (Wiley)

Extensively revised and updated for 2013, the book includes details of the many conditions that demand a strictly gluten-free diet, which nowadays in the UK affect up to 10% of people of all ages. It covers how to get started on a gluten-free lifestyle and how to do it healthily, easily and enjoyably. It includes over 100 gluten-free recipes, lists what foods can be eaten and which should be avoided; explains prescriptions for gluten-free basics  and shows what to look out for on labels, menus and in promotions. All in the Dummies‘ readable, easy-to-grasp tone.

Merlin Entertainments Group

Sole nutritionist for the group, including Legoland, AltonTowers, Chessington, Thorpe Park, Warwick Castle and sites in Continental Europe and USA. Projects include nutrition audits, strategy, staff training, menu design and analysis, recipe adaptation, nutrient and allergen information, media releases, display and website-writing, helping to meet commitments to the Responsibility Deal.

TuGo Food Systems

Pizza and pasta recipe design and analysis, advice on ingredients, claims, traffic-light labelling and allergen-declarations, brochure-writing and support for their products in the Children’s Food Trust and Food For Life Partnership concepts.

Ministry of Defence

Designed and delivered nutrition courses for military chefs at Europe’s largest catering training establishment. Managed all nutritional and health-promotion elements of a fitness-trial, including a re-design of mess menus and food services.
